    Spiced Kale and Brie Oatmeal

    A savory and creamy dish, this Spiced Kale and Brie Oatmeal is perfect for any cool night since it is warm, gooey and ready in under 15 minutes.


    Ingredients
    3/4
    cup
    rolled oats
    1 1/4
    cups
    water
    1
    tablespoon
    coconut oil
    2
    tablespoons
    chopped onion
    1
    teaspoon
    minced garlic
    1 1/2
    ounces
    chopped brie
    1/4
    teaspoon
    red pepper flakes
    1
    cup
    baby kale leaves

    salt, to taste
    Directions
    In a sauce pan on medium heat combine rolled oats and water. Cook until mixture begins to thicken.
    Meanwhile, in a small fry pan warm olive oil and add onion and garlic. Cook until onion has softened and garlic is crisp on edges.
    Fold in onion, garlic, brie, red pepper flakes and kale into oatmeal, then remove from heat and set aside.
    Season with salt to taste. Plate and drizzle with remaining olive oil.
