    Spiced Cran Pumpkin Bread

    Cranberry sauce, pumpkin, cinnamon, ginger and panela come together in this sweet and tangy Spiced Cran Pumpkin Bread.

    panela, shredded
    1 1/4
    cups
    all-purpose flour
    1/2
    cup
    whole wheat flour
    1
    teaspoon
    baking soda
    1
    teaspoon
    cinnamon
    1/2
    teaspoon
    ginger
    1/2
    cup
    cranberry sauce
    1/2
    cup
    pumpkin puree
    2
    eggs, beaten
    1/2
    cup
    coconut oil, melted
    1/3
    cup
    full fat coconut milk
    1
    teaspoon
    vanilla
    Directions
    Preheat oven to 350F. Butter and flour a loaf pan and set aside.
    In a large bowl whisk together all dry ingredients. In another whisk remaining ingredients. Pour cranberry/pumpkin mixture into dry mixture and fold until batter is mostly smooth with only tiny lumps.
    Pour batter into loaf pan and transfer to oven. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
    Cool in pan for a few minutes, then transfer to wire rack until cool enough to handle, invert, slice and serve.
