    Smoked Serrano Georgia Pecan Brittle

    Add some heat to your desserts with this smoked serrano Georgia pecan brittle. Just a llittle bit of smokey seasoning packs a punch and adds a ton of flavor. 


    Ingredients

    granulated sugar

    cup
    corn syrup
    1/2
    teaspoon
    kosher salt

    cups
    Georgia pecans, toasted and roughly chopped, divided
    4
    tablespoons
    unsalted butter
    2
    teaspoons
    baking soda
    1
    teaspoon
    smoked serrano powder
    Directions
    Grease a 10 x 15-inch baking pan with butter.
    In a large saucepan over medium heat, cook the sugar, corn syrup and 1/2 cup water until the mixture boils and the temperature reaches the hard crack stage (325° F) on a candy thermometer, stirring as needed to prevent the mixture from boiling over.
    Quickly stir in the rest of the ingredients, except for 1 cup of pecans. Mix thoroughly and then pour on the prepared pan and spread thin. Working quickly, add the remaining nuts, pressing them into the brittle.
    Let the brittle cool completely (about ½ hour), then break it into pieces.
    Store pieces, covered, separated by parchment or wax paper, in an airtight container for up to 1 week.
