    Simple Veggie Egg Muffins

    These Simple Veggie Egg Muffins are delicious and clock in at under 85 calories each. Enjoy this zucchini, onion, and habanero pepper jack cheese bite alone or add a slice of toast for a quick under 200 calories breakfast!

    shredded habanero pepper jack cheese

    chopped zucchini

    Chopped Cilantro

    salt and fresh cracked black pepper, to taste

    spray coconut oil
    Directions
    Preheat oven to 375F. Spray cupcake tin wells with spray coconut oil and set aside.
    Combine all ingredients in a bowl, stirring until thoroughly combined.
    Divide egg mixture among 12 wells.
    Transfer to oven and bake for 15-20 minutes, until crisp on edges and fluffy.
    Cool for a few minutes and garnish with chopped cilantro before serving.
