    Shrimp Tacos with Mango Salsa

    The only thing that makes shrimp tacos better is mango salsa. With this dish, you’ll get just the right amount of sweetness from the mangoes, spicy from the jalapeños, and acidity from the lime juice.


    Ingredients
    For the Mango Salsa

    red onion, minced

    juice of 2 limes
    For the Shrimp Tacos
    2
    pounds
    shrimp, peeled and deveined

    salt to taste

    pepper to taste

    Juice of 1/2 lemon
    3
    garlic cloves, minced

    tablespoons
    sofrito
    1
    tablespoon
    Olive Oil

    tortillas, warmed

    Lime wedges, for serving
    Directions
    To make the mango salsa: Combine all ingredients in a small bowl, toss, and set aside.
    For the shrimp tacos: Season shrimp with salt, pepper, lemon juice, garlic, and sofrito.
    Add one tablespoon of olive oil to a sauté pan on medium high heat. Add shrimp and cook for 4 minutes stirring frequently until shrimp turns pink.
    Add four or five shrimp to each tortilla with two tablespoons of mango salsa. Serve with lime wedge and enjoy!
