Shirred Eggs with Chorizo and Serrano Hash

This Shirred Eggs with Chorizo and Serrano Hash recipe is an entire delicious brunch rolled up into one dish: eggs are combined with smoky chorizo and a spicy serrano potato hash.

Fresh Mexican chorizo links

Directions
Preheat oven to 425 F. Line baking sheet with aluminum foil and set aside.
Remove casings from chorizo and discard.
In a sauté pan on medium-high heat add chorizo, paprika, and serrano. Cook until chorizo is well done.
Add potatoes and mix until fully incorporated.
Grease a 9-inch pie dish with cooking spray.
Add chorizo hash mixture to bottom of pan. Crack eggs onto chorizo mixture.
Mix salt and pepper together in pinch bowl. Sprinkle mixture onto eggs. Sprinkle eggs with habanero jack cheese.
Transfer plate to oven and cook for 7-10 minutes, until eggs are set.
Garnish with cilantro and cherry tomatoes.
