    Sausage, Beans, and Paprika Stew

    Baja California native, Karla Zazueta, created this Cocido De Salchicha to remind her of home. Mission accomplished! This hearty mix of veggies and sausage just screams Mexican comfort food. 


    Ingredients
    For stew:

    sausages (cut in chunks)

    can
    organic white beans
    1
    onion (finely chopped)

    carrots (peeled and cut in small cubes)

    medium tomatoes (chopped)

    baby potatoes (peeled and cut in chunks)

    stalks
    rosemary (finely chopped)

    dried oregano

    cloves
    garlic (crushed)

    paprika

    salt to taste

    ground black pepper

    vegetable oil
    For garnish:
    1
    cup
    cilantro (freshly chopped)
    1/2
    cup
    feta cheese (crumbled)
    1
    lime (cut in wedges)
    Directions
    Heat the oil in a casserole dish (dutch oven) at medium heat, fry the onions and garlic for 4 min mixing to avoid burning.
    Add the sausages cut in chunks and fry for 2 min.
    Then add the rest of the vegetables and the paprika, mixing everything very well. Fry for 2 min.
    Add the water, salt, ground black pepper, rosemary & oregano.
    Put the lid on and turn the heat to low. Let it cook for 15 min and then add the tin of white beans.
    Cook for 5 min and make sure the pieces of sausages are properly cooked.
    Serve in a bowl and garnish with fresh coriander, feta cheese and a squeeze of lime. Enjoy!
