    Salmon with Guava Sauce

    In this recipe oven baked salmon is topped with a guava sauce simply made with fresh garlic, ground cumin, guava paste and orange juice.


    Ingredients
    For the Salmon
    4
    salmon fillets, 6 to 8 ounces each
    1
    tablespoon
    onion powder

    kosher salt and freshly ground black pepper, to taste
    For the Guava Sauce
    2
    tablespoons
    vegetable oil
    4
    cloves
    garlic, chopped
    2
    cups
    guava paste, cut into small pieces
    1/2
    cup
    orange juice
    2
    tablespoons
    fresh lime juice
    1/4
    teaspoon
    cumin powder
    *
    kosher salt and freshly ground black pepper, to taste
    *
    fresh cilantro, for garnish
    Directions
    Preheat the oven to 450F.
    Season salmon with onion powder, salt and pepper. Place salmon, skin side down, on a nonstick baking sheet.
    Bake until salmon is cooked through, 12 to 15 minutes.
    Meanwhile make the sauce. In a medium saucepan, warm the oil over low heat, add the garlic and cook until soft but without color.
    Add the rest of the sauce ingredients plus 3 tablespoons water. Simmer about 10 minutes over low heat, stirring often. Pour the sauce over the salmon fillets. Garnish with fresh cilantro and serve immediately.
