    Roasted Quinoa Plum Salad

    This power-packing Roasted Quinoa Plum Salad recipe mixes roasted plums with bright heirloom tomatoes, fresh parsley, hearty quinoa, and lemon juice for a dish that is both filling and refreshing. 


    Ingredients

    large firm plums, pitted and quartered

    cooked quinoa

    green onoin, chopped

    mini heirloom tomatoes, sliced
    1/4
    cup
    chopped parsley
    1/4
    cup
    lemon juice
    1
    teaspoon
    each salt and black pepper
    1/2
    teaspoon
    jalapeño pepper flakes

    Olive Oil
    Directions
    Preheat oven to 400 F. Line a baking sheet with aluminum foil and set aside.
    Rough chop plums, transfer to baking sheet and cook for 15 minutes.
    Meanwhile add quinoa, green onion, heirloom tomatoes and parsley to a large bowl. Fold quinoa to combine ingredients.
    In a small bowl whisk together lemon juice, salt, black pepper, jalapeño pepper flakes and olive oil. Pour dressing onto quinoa and top with plums. Toss to combine and serve warm.
