Roasted Purple Cauliflower, Sweet Potato and Mozzarella Salad

Dried blueberries, fresh mozzarella, lemon juice and cilantro punch up the sweetness and the flavor in this sweet and savory Roasted Purple Cauliflower, Sweet Potato and Mozzarella Salad.

purple cauliflower, roasted

sweet potato, roasted

fresh mozzarella, roughly chopped

dried blueberries

tablespoon
lemon juice

tablespoon
cilantro, roughly chopped

Directions
In a sauté pan on medium heat, combine 1/2 tablespoons olive oil with cauliflower and sweet potato. Stir until warmed through.
Transfer warmed veggies to a bowl and top with mozzarella, blueberries, remaining olive oil, lemon juice and cilantro. Toss to combine and season with salt and pepper to taste.
