    Roasted Chayote Soup

    Serve up a bowl of light and sweet Roasted Chayote Soup with a dollop of Smokey Chipotle Crema. A dish that is simple, easy to make, and supremely delicious.

    diced chayote
    3
    cups
    vegetable broth
    1
    tablespoon
    Lime Juice
    1
    cup
    Sour Cream
    1
    tablespoon
    ground chipotle
    1
    tablespoon
    ground paprika
    1
    teaspoon
    ground ancho
    2
    tablespoons
    finely chopped packed parsley
    Directions
    Preheat oven to 350F.
    In an oven safe dish add olive oil, salt, black pepper, and chopped chayote. Toss to coat then transfer to oven. Bake for 30 minutes, or until chayote is tender.
    Transfer chayote, vegetable broth, and lime juice to blender. Blend until smooth. Adjust salt and pepper to taste.
    In a small bowl mix sour cream with ground chipotle, paprika, and ground ancho chile.
    Serve soup with a dollop of chipotle crema in center of bowl. Stir in crema and top soup with 1/2 packed tablespoon of parsley.
