    Rhubarb Mojito

    Kick back, relax and enjoy a refreshing Rhubarb Mojito. Tart rhubarb is sweetened and simmered with a bit of orange before getting a generous shot of rum, fresh mint and sparkling water for a bubbly flavorful drink that can’t be beat.

    thinly sliced rhubarb

    sugar

    orange, zested

    cup
    white rum

    fresh mint leaves, sliced

    cups
    sparkling water
    2
    thin 5-inch stalks of rhubarb
    Directions
    In a pot set over medium-high heat combine rhubarb, sugar, 1/2 cup water and orange zest. Bring to a boil, then simmer until rhubarb has softened and liquid has reduced by half.
    Strain and set aside until cool.
    In two short glasses add 2 ounces of rum, 5 mint leaves and 1/4 cup of rhubarb syrup to each.
    Top each glass off with 1 cup of sparkling water and a thin rhubarb stalk.
