    Red Bean Tacos

    These Red Bean Tacos are a veggie lovers dream with hearty red beans, sweet onion, crisp zucchini, fresh tomato and savory green onion tucked into a charred tortilla.


    Ingredients

    coconut oil
    1/2
    large yellow onion, large dice
    1
    large zucchini, small dice

    15-ounce cans red beans or kidney beans

    tablespoon
    garlic paste
    1/4
    tablespoon
    ginger paste

    salt, pepper and red pepper flakes to taste

    large tomato, diced

    tablespoons
    Olive Oil

    tablespoons
    lemon juice

    green onion, chopped

    flour tortillas, warmed and charred
    Directions
    In a sauté pan on medium heat add coconut oil. Once melted and hot, add onion, zucchini, red beans, garlic paste and ginger paste. Cook until onion is browned on edges and both the onion and zucchini have softened.
    Season with salt, pepper and red pepper flakes to taste. Set aside.
    In a small bowl combine tomato, olive oil and lemon juice. Toss to coat.
    Divide filling among tortillas, top with tomato and sprinkle with green onion.
