Quinoa Pumpkin Salad

Lighten up your winter plate with Quinoa Pumpkin Salad. Black quinoa, roasted pumpkin, tomato, cotija cheese, and scallions keep you full, while the lime agave dressing brings a sweet, fresh flavor to this winter salad.

black quinoa, cooked

fresh lime juice

blue agave

grape tomatoes, halved

scallion, chopped

parsley

ounces
cotija, cubed or crumbled

cup
roasted pumpkin, diced
1/2
teaspoon
red chili flakes
Directions
In a large bowl add quinoa, tomatoes, scallion, parsley, cotija, red chili flakes and pumpkin.
In a small bowl mix oil, lime juice and agave.
Fold dressing into quinoa salad. Add salt and pepper to taste.
Serve at room temperature.
