    Quinoa Chocolate Muffins

    These light muffins are made with healthy naturally gluten-free quinoa flour and a touch of cocoa powder. Try these muffins for breakfast, as an afternoon snack or for dessert.

    cup
    quinoa flour
    1/2
    cup
    granulated sugar
    2
    tablespoons
    cocoa powder
    1/4
    teaspoon
    baking soda
    1/4
    teaspoon
    fine salt
    2/3
    cup
    milk, yogurt or water
    1/3
    cup
    Olive Oil
    1
    large egg
    1
    teaspoon
    vanilla extract

    confectioners' sugar
    Directions
    Preheat the oven to 350F. Line 6 standard size muffin cups with paper liners.
    Mix all the dry ingredients in a bowl and all the liquid ones in another bowl. Then mix everything together with a whisk, until you have a smooth batter.
    Divide evenly between the muffin cups and bake for 18 to 20 minutes.
    Let cool, dust with confectioners´sugar, and serve.
    Store at room temperature in tightly sealed containers.
