    Quinoa, Black Bean, and Cauliflower Salad

    This salad is so hearty it can definitely stand on its own as a main dish. Crunchy cauliflower is tossed with nutty quinoa and black beans then dressed with a simple vinaigrette and topped with cilantro.

    white wine vinegar

    raw cauliflower, cut into small florets

    cooked quinoa

    cooked black beans

    Chopped Cilantro

    extra virgin olive oil

    sea salt
    Directions
    Place the chopped red onion in a bowl and add the vinegar. Let it sit for about 10 to 15 minutes.
    Add the rest of the ingredients to the bowl, mix carefully and check for seasoning. Serve cold or at room temperature.
