    Quinoa and Red Beans

    Taking the classic flavors of Arroz con Frijoles, this Quinoa and Red Beans is a healthier version that is protein packed and a delicious meal all its own.


    Ingredients

    Olive Oil

    medium onion, chopped

    cup
    mixed sweet peppers, chopped

    tablespoons
    garlic paste

    15-ounce can red beans or kidney beans
    2
    bay leaves
    1
    tablespoon
    cumin
    1
    tablespoon
    paprika
    1/2
    teaspoon
    garlic powder
    4
    cups
    quinoa, cooked
    1
    cup
    water

    season with salt, pepper and red pepper flakes to taste

    cilantro, chopped
    Directions
    In a sauté pan on medium heat add olive oil. Once hot, top with onion, peppers and garlic paste. Cook until onion and peppers are softened and golden on edges.
    Add kidney beans and spices. Continue to cook until kidney beans are crisping up, about 4 minutes.
    Add quinoa, stir until uniform and mixture takes on a reddish hue. Top with water and stir again, until water is evaporated and quinoa is heated through.
    Season dish with salt, pepper and red pepper flakes to taste. Add cilantro, stir to incorporate and serve.
