    Quick Pimentónes en Nogada

    Quick Pimentónes en Nogada combine the flavors you love of Chiles en Nogada with a short prep time so you can add holiday cheer to any day.


    Ingredients
    For the Pimentónes
    4
    roasted sweet bell peppers, halved and deseeded

    coconut oil

    ground beef

    onion, chopped

    jalapeno, minced
    1/2
    green apple, finely chopped
    1/2
    pear, finely chopped
    1/4
    teaspoon
    oregano
    1/4
    teaspoon

    Salt and pepper, to taste
    For the Sauce and Garnish
    1/2
    cup
    walnuts
    1
    ounce
    goat cheese
    1/3
    cup
    whole milk

    drizzle of honey

    cup
    pomegranate seeds
    Directions
    Preheat oven to 250F. Place roasted peppers on aluminum lined baking sheet to keep warm.
    Meanwhile, in a sauté pan on medium heat melt oil. Add remaining ingredients in pimentónes and stir until meat is cooked through, veggies are tender and mixture is fragrant.
    In a food processor combine sauce ingredients (except pomegranate seeds) and blend until smooth. Set aside.
    Remove pimentónes from oven and stuff with ground beef mixture. Spoon a few tablespoons of sauce over each pepper and sprinkle with pomegranate seeds. Serve warm.
