    Pumpkin Spice Oatmeal

    Welcome the cooler weather and holiday season with a bowl of Pumpkin Spice Oatmeal. Bright pumpkin is combined with coconut milk and oats and a dash of vanilla and cinnamon. Topped with cinnamon and agave chopped walnuts, this oatmeal is a sweet way to fuel your body right!


    Ingredients

    cups
    no-sugar added coconut milk
    1/2
    cup
    rolled oats
    1
    tablespoon
    light brown sugar
    2 1/2
    teaspoons
    ground cinnamon
    1
    teaspoon
    vanilla extract
    3/4
    cup
    canned pumpkin puree
    1/2
    cup
    chopped walnuts
    1 1/2
    teaspoons
    agave syrup
    Directions
    In a pot set over medium-high heat warm the coconut milk, rolled oats, brown sugar, 2 teaspoons cinnamon and vanilla. Whisk until the sugar is dissolved and the coconut milk is steaming.
    Cover, reduce heat to low and simmer for 10 minutes.
    Remove the pot from the heat. Uncover and add pumpkin puree. Stir to combine and let stand for a few minutes to thicken.
    In a small bowl combine walnuts, agave and remaining cinnamon. Stir until the walnuts are evenly coated.
    Divide oatmeal between two bowls and evenly top with the cinnamon agave walnuts.
