    Plum Chia Bread

    This delicious plum chia bread does wonders for our body and soul. Packed full of nutrients, it goes well with that afternoon cafe. 


    Ingredients
    3
    tablespoons
    chia seeds
    2 1/2
    cups
    dice plums
    3/4
    cup
    sugar
    1/2
    cup
    Olive Oil
    1 1/2
    cups
    flour
    1
    teaspoon
    baking soda
    1
    tablespoon
    apple cider vinegar
    1
    teaspoon
    vanilla
    Directions
    Preheat oven to 350 degrees.
    Mix chia seeds with 9 tablespoons of water and leave aside until all the seeds are hydrated.
    In a large bowl, combine sugar and olive oil and mix until thoroughly combined. Stir in drained chia seeds.
    Add the vanilla and vinegar then the flour and baking soda.
    Finally, carefully mix in the prunes.
    Put the mixture into a loaf pan and bake for about 35 minutes or until a toothpick inserted into the middle of the loaf pan comes out clean.
