    Piri Piri Black-Bean Burgers with Plantains

    Some of our favorite dishes include the delicious combination of black beans and sweet plantains. Add some heat, and you're good to go! Heat comes from piri piri, a pepper that grows in South Africa. It has some kick, meaning less is more, so for a little less spice, use fresh diced jalapeño. Sliced avocado with thin sliced onions over fresh lettuce and tomato add color, texture and crunch. Cilantro and lime juice balance out some heat in the burger, while that sweet plátano frito is the real treat on top.

    piri piri dried chiles or 1 whole jalapeño

    fresh lime juice

    tablespoon
    finely chopped cilantro

    tablespoon
    Olive Oil
    Directions
    Preheat oven to 350°.
    Mash 3/4 cup black beans with piri piri until a thick paste forms, or pulse ingredients in a food processor until a paste forms. Note: If you are making fresh black beans add the piri piri to enhance the flavor of the beans and caldo while cooking.
    In a bowl add remaining ingredients (except for the olive oil) with black bean paste. Fold to combine. Season with salt and pepper to taste.
    Form 8 patties that are 2.5 inches wide and ½ inch thick. Brush each side with olive oil and transfer to baking sheet.
    Bake patties for 15 minutes, flipping once halfway through. Tip: Add a slice of cheese to the burgers 2 minutes before removing them from the oven for even melting and crispy edges.
    Add fresh fried plantains on top, and dust with chili powder.
