    Pineapple-Basil Guarapo Cooler

    Guarapo de Piña magically turns pineapple juice into alcohol. This is a drink that you will crave, especially on a sweltering summer day. Similar to Tepache from Mexico, it's very refreshing, and its tropical flavors blend beautifully with rum. The Pineapple-Basil Guarapo Cooler adds savory and aromatic basil for a twist on the classic.


    Ingredients

    ripe pineapple, plus 1 cup diced pineapple

    granulated sugar

    fresh basil leaves, plus more for garnish

    Directions
    Make ahead: Place diced pineapple in ice cube tray, dividing equally among sections. Fill sections with water and freeze.
    For the guarapo: Wash pineapple completely. Remove stem and base and cut pineapple, skin on, into 1-inch spears. Place pineapple, sugar, and water in large pot and bring to boil. Boil 15 minutes. Remove from heat, add basil, and allow to cool completely. Strain and chill until ready to serve.
    For each cooler: Place 2 ounces rum and 2 pineapple ice cubes (from freezer) in tall glass. Add guarapo to fill. Stir, garnish with basil leaf, and serve.
