Pina de Agave

Cachaça, pineapple, palm syrup, mezcal and a cayenne dusted apple create the signature cocktail on Portland’s Red Star Tavern’s spring menu.


Ingredients

cachaça or tequila
1
ounce
fresh lime juice
1/2
ounce
spiced palm syrup
1/4
ounce
homemade pineapple shrub or pineapple drinking vinegar, such as Som
5
dashes
Mezcal
1
slice
apple

cayenne pepper
Directions
Combine the cachaça, lime juice, syrup and pineapple shrub in a cocktail shaker and fill with ice.
Shake and double strain into a glass filled with fresh ice. Float the mezcal on top.
Coat a slice of apple with cayenne powder and rest on top.
