Peruvian Avocado, Tuna and Vegetable Salad

Peruvian Avocado, Tuna and Vegetable Salad is light and bright thanks to a combination of tuna, avocado, cucumber, cherry tomatoes, cilantro, walnuts, celery and a tangy olive oil and lime juice dressing.


Ingredients

Peruvian avocados, pitted, peeled and cubed

6-ounce can water-packed tuna, drained

medium cucumber, seeded and diced

cup
cherry tomatoes, halved

cup
celery, diced
1/2
cup
cilantro leaves, rinsed and finely chopped
1/4
cup
walnuts, chopped
1/4
cup
Olive Oil
1/2
cup
Lime Juice

salt and pepper to taste
Directions
In a large bowl, combine the avocado, tuna, cucumber, cherry tomatoes, celery, cilantro and walnuts. Gently toss with olive oil and lime juice. Season to taste with salt and pepper before serving.
