Pernil, Feta and Tomato Hand Pies

Crisp, flaky and bursting with flavor, these Pernil, Feta and Tomato Hand Pies are perfect for breakfast, lunch, brunch and beyond!


Ingredients

package
refrigerated crescent rolls
1
large tomato, sliced
1
cup
crumbled feta
1
egg, beaten
Directions
Preheat oven to 375.
Unroll package and divide into 4 equal parts. Using a rolling pin and flour as needed, roll each square into 6x6 inch squares.
Place 1/2 cup pernil in each square, top with a large tomato slice and sprinkle with 1/4 cup feta. Repeat with all squares.
One hand pie at a time, lift each point of the square to the center so very little of the filling shows. Repeat with remaining squares.
Place squares on a lined baking sheet. Brush each square with egg, then transfer to oven. Bake hand pies for 15 minutes, or until golden on edges and fragrant. Enjoy hot!
