    Pepper Crusted Steak with Spicy Cherry Compote

    Enjoy a plate of Pepper Crusted Steak with Spicy Cherry Compote combining molasses, orange liqueur, jalapeños, and seasonal cherries into a gourmet dish.


    Ingredients
    For the Spicy Cherry Compote

    orange liqueur

    teaspoon
    lemon juice, freshly squeezed

    minced jalapeño
    For the Steak
    1
    onion, thinly sliced

    tablespoons
    freshly cracked black pepper

    tablespoon
    coarse sea salt

    small steaks of choice, 4-6 ounces each

    almonds, toasted and chopped
    Directions
    Make the cherry compote: In a sauce pan on medium heat melt 1/2 tablespoon butter. Add sugar, molasses, cherries, salt, orange liqueur, and lemon juice.
    Meanwhile, preheat a pan on medium-high heat. Melt remaining butter and add onion. Cook until caramelized. Remove from pan and set aside.
    Sprinkle black pepper on one side of steaks. Season both sides with coarse salt.
    Lay steaks pepper side down on same pan used for onions. When crust has developed, flip and cook through as desired.
    Once cherry mixture is bubbling add jalapeño. Cook for another 2-3 minutes, then remove from heat and set aside.
    To plate, place a bed of caramelized onion topped with toasted almonds on plate. Lay steaks on top and ladle with spicy cherry compote. Sprinkle with additional minced jalapeño as garnish.
