    Pear Panela Crunch

    Directions
    Preheat oven to 350F. Grease loaf pan and set aside.
    In a small bowl mix flax and soy milk. Let stand for 5 minutes.
    In a medium bowl mix pear, sugar, panela, cinnamon, ginger, and vanilla to macerate fruit.
    Add flax mixture to pear, along with molasses and vegetable oil.
    In a separate bowl sift or thoroughly mix flour, baking soda, baking powder and salt.
    Fold dry ingredients into wet ingredients, 1/3 at a time. Add millet to dough and fold until mixture is moist and all ingredients are thoroughly combined. Do not over mix.
    Fill greased loaf pan(s) with dough until 3/4 full.
    Bake for 50 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.
