    Peach Passionfruit Jam

    This Peach and Passionfruit Jam pairs perfectly with your morning slice of toast, smeared on a muffin or as a side to a creamy scoop of ice cream because it is sweet, bright and sinfully delicious!


    Ingredients

    15 ounce can peaches, drained and chopped
    1/2
    cup
    passionfruit juice or nectar
    3
    tablespoons
    lemon juice
    1 1/2
    tablespoons
    low or no sugar needed pectin
    1/2
    cup
    sugar
    Directions
    In a blender or food processor combine peaches, passionfruit juice and lemon juice. Pulse until mixture is mostly smooth with a bit of fruity lumps.
    Transfer peach passionfruit mixture to a large sauce pan on medium heat. Sprinkle in pectin while stirring. Continue stirring until mixture reaches a rolling boil.
    Add sugar and continue stirring. Once mixture reaches a hard boil again, allow to boil for a minute while continuously stirring.
    Remove jam from heat and allow to cool. Once cool, spoon into clean jars and refrigerate for up to 2 weeks or enjoy immediately!
