    Parsnip Chips with Jalapeño Black Pepper Yogurt Sauce

    Parsnip Chips with Black Pepper Yogurt Sauce are a healthy and hearty treat combining the slight sweetness of parsnips with the delicate spice of fresh cracked black pepper accompanied by the tang of Skyr yogurt and a jalapeño kick.


    Ingredients

    parsnips, scrubbed and peeled

    spray coconut oil
    1/3
    cup
    plain Icelandic Skyr yogurt
    1
    teaspoon
    fresh cracked black pepper
    1/4
    teaspoon
    salt
    1/2
    jalapeno, minced
    Directions
    Preheat oven to 325F. Line baking sheet with parchment paper and lightly spray with cooking spray. Set aside.
    Using a mandolin, slice parsnips into paper-thin slices.
    Line baking sheet with parsnip slices, overlapping slightly on the edges. Spray well with cooking spray, then transfer to oven. Bake for 25-30 minutes, until edges curl up and are crisp.
    Meanwhile, in a small bowl combine yogurt, black pepper, salt and jalapeño. Stir until combined.
    Serve parsnip chips along with yogurt sauce garnished with a few slices of fresh jalapeño.
