    Papa a la Huancaina (Potatoes and Yams with Cashew Cheese, Quinoa and Chili Pepper Sauce)

    Hailing from Peru's city of Huancayo, Papa a la Huancaina is made up of boiled yellow potatoes covered with an even yellower spicy and creamy cheese sauce, and accompanied by hard-boiled eggs and black olives


    Ingredients
    For the Cashew Cheese

    For the Potatoes

    cooked organic mini potatoes

    cooked yam, cut in slices

    ají amarillo paste

    yellow bell pepper, chopped

    cooked quinoa

    cashew cheese (or queso fresco)

    Directions
    To prepare the cashew cheese, process all the ingredients together in a blender and refrigerate for at least a couple hours (preferably overnight).
    To prepare the dish, process aji amarillo paste, bell pepper, oil, quinoa, cheese, milk, salt and pepper, in a blender. adding more of any ingredient you think necessary to get the right consistency and taste. It should be spicy and creamy (like fresh mayonnaise).
    Cover 4 plates with a bed of kale and spinach.
    Place potatoes and yam slices on top, and cover with the aji amarillo mixture.
    Garnish with olives and radishes cut in half.
