    Papa a la Huancaina

    Ingredients
    1/4
    cup
    oil
    4
    potatoes
    1
    can
    evaporated milk
    1
    aji amarillo
    12
    ounces
    queso blanco
    1
    egg
    1
    peruvian olive
    4
    lettuce pieces
    6
    non-salty crackers
    1
    salt to taste
    Directions
    Boil potatoes and egg together.
    Peel both and set aside in bowl.
    In a blender, place aji amarillo and oil until creamy.
    Add milk and cheese and continue to blend.
    Add crackers to thicken.
    Chill sauce for 15 min.
    To serve, place lettuce leaf on plate and slice potatoes.
    Pour huancainna sauce over the potatoes.
    Garnish with ¼ egg and piece of olive. Serve chilled.
