    Ortega Chilled Vegetarian Taco Soup

    Ortega Chilled Vegetarian Taco Soup takes what you love about tacos and turns it into a soup with tomatoes, black beans, cilantro, avocado and sour cream topped with crispy crushed taco shells.


    Ingredients

    28 oz can whole tomatoes

    small red bell pepper, seeded and coarsely chopped

    celery stalks, coarsely chopped
    1/2
    cup
    fresh cilantro leaves
    1
    cup
    vegetable stock or water
    1
    1.25 oz envelope Ortega Taco Seasoning

    15 oz can Ortega Black Beans, drained
    1
    ripe avocado, diced
    1
    small red onion, minced

    Sour Cream

    Ortega Hard Taco Shells, coarsely crushed
    Directions
    Put tomatoes, red pepper, celery, cilantro, stock or water, and taco seasoning in blender and pulse until smooth. Chill at least 1 hour, or up to overnight.
    To serve, pour soup into bowl and garnish each serving with spoonful of black beans, diced avocado, minced onion, and sour cream.
    Top with hearty sprinkling of crushed taco shells. Serve at once.
