    medium sweet potato, roasted

    fresh orange juice

    Directions
    In a medium bowl whisk together the flour, sugar, baking soda and cinnamon.
    Peel the sweet potato and put in a medium bowl; mash until smooth. Add the remaining ingredients. Add the wet ingredients to the dry and fold until incorporated.
    Heat a nonstick skillet over medium-high heat. Pour the batter into the skillet, 1/4 cup per pancake.
    Once bubbles form on the surface of the pancakes, 2 to 3 minutes, flip and continue to cook until golden brown.
