    Orange Salad with Chile Ancho Dressing

    Get your hit of vitamin C with this salad, which uses two types of oranges. It's fresh and spicy and a great opener to any meal. 


    Ingredients
    4
    oranges, 2 types (like Navel and Cara Cara)
    1
    tablespoon
    white wine vinegar
    3
    tablespoons
    neutral tasting oil
    1
    teaspoon
    sea salt
    1/2
    teaspoon
    agave syrup
    1/4
    teaspoon
    ground ancho chile
    2
    scallions, white and light green part only, sliced
    3
    tablespoons
    pumpkin seeds
    Directions
    Peel and segment the oranges. Be sure to remove all the seeds. Arrange on a platter.
    Mix the vinegar, the oil, the salt, ground chile ancho, agave and salt. Drizzle over the oranges slices.
    Top with the sliced scallions and finish by sprinkling on pumpkin seeds. Serve immediately.
