No-Fry Jalapeño Poppers

Usually battered and fried, and stuffed with cheese, Jalapeño Poppers are fairly sinful. We thought we would come up with the recipe that was a little easier on your daily calorie count, and we think we have a winner! This no cook version slathers Neuchâtel cheese on spicy jalapeños for a quick and easy treat.  


Ingredients

large jalapeños
4
ounces
Neuchâtel cheese, softened
1
tablespoon
chopped chives
1
clove
garlic, finely minced
1
pinch
salt
4
ounces
good quality Spanish tuna, packed in oil
*
sliced pimentos, for garnish
Directions
Slice the jalapenos lengthwise, and remove the inner membrane and seeds. Set aside.
Using a fork on a plate, mash the Neuchâtel cheese together with the chopped chives, and minced garlic. Season with salt.
. Fill each of the jalapeños with the cheese, 1 ounce of tuna, and top with the sliced pimentos.
