    Naked Beet Chips with Serrano Yogurt Dipping Sauce

    These Naked Beet Chips are sweet and earthy, and a quick dip into the Serrano Yogurt Dipping Sauce gives them a zesty kick.


    Ingredients
    2
    large beets, scrubbed
    *
    spray coconut oil

    cup
    plain Icelandic Skyr yogurt
    1
    teaspoon
    black pepper
    1/4
    teaspoon
    salt
    1/2
    serrano pepper, minced
    2
    tablespoons
    Chopped Cilantro
    Directions
    Preheat oven to 325F. Line baking sheet with parchment paper and lightly spray with cooking spray. Set aside.
    Using a mandolin, slice beets into paper-thin slices.
    Line baking sheet with beet slices, overlapping slightly on the edges. Spray well with cooking spray, then transfer to oven. Bake for 25-30 minutes, until edges curl up and are crisp. Allow to rest for 5 minutes to crisp up even more before serving.
    Meanwhile, in a food processor combine yogurt, black pepper, salt, serrano pepper and cilantro. Blend until smooth.
    Serve beet chips with Serrano Yogurt Dipping Sauce.
