    Mostly Green Pasta

    Bring on the green with this Mostly Green Pasta combining green pepper, zucchini, jalapeño, and tomato in a tangy lemon butter sauce.


    Ingredients

    tablespoons
    butter
    1/2
    onion, thinly sliced
    1/2
    green pepper, thinly sliced
    1
    medium zucchini, thinly sliced
    1/2
    jalapeno, thinly sliced
    1
    bunch broccolini, trimmed
    1
    Roma tomato, diced
    1/2
    large lemon, juiced and zested
    1
    pound pasta, of choice cooked

    salt and pepper to taste

    lemon, thinly sliced as garnish
    Directions
    In a large sauté pan on medium heat melt butter.
    Add onion, pepper, zucchini, jalapeño and broccolini. Cook until onion has softened and begins to caramelize and broccolini is tender. Add roma tomato, lemon juice and lemon zest. Cook an additional minute.
    Add pasta and toss to coat. Season with salt and pepper to taste and garnish with thinly sliced lemon.
