    Monkey’s Tail (Cola de Mono)

    If you are a fan of coffee shop holiday offerings, this beverage is for you. Smooth and creamy, and not too sweet, cola de mono is a popular Christmas beverage in Chile.

    For the sake of simplicity, this recipe uses instant coffee. However, if you live near a coffee shop, or have an espresso maker handy, substitute 3-4 shots of freshly made espresso for the instant coffee, for a fuller coffee flavor.

    whole milk

    vanilla bean, split from end to end

    whole cloves

    cup
    white sugar

    tablespoons
    instant coffee
    Optional

    cup
    brandy or rum
    Directions
    Using a 2-quart sauce pan bring the milk, cinnamon stick, vanilla bean, and cloves to a boil.
    Remove from the heat once it begins to boil.
    Stir in the sugar and instant coffee. Allow to cool and then add the brandy or rum, if desired.
    Remove the whole spices before serving. Serve chilled or warm.
