    Mexican Hominy, Black Bean, and Quinoa Salad

    This is the perfect combination of ingredients for a fresh, hearty, Mexican salad. It's bright, hearty, and easy to throw together. 


    Ingredients

    cup
    minced onion
    3
    tablespoons
    white wine vinegar
    1 1/2
    cups
    cooked black beans
    2
    cups
    cooked quinoa
    1 1/2
    cups
    cooked hominy
    1
    tablespoon
    lemon juice
    3
    tablespoons
    extra virgin olive oil

    cilantro, pumpkin seeds, Serrano pepper for garnish
    Directions
    In a bowl add the chopped onion and add the vinegar. Let it stand for a couple of minutes.
    To the onion mixture, add the quinoa, beans and hominy, mix well.
    Add oregano, salt, lemon juice, and olive oil. Check for seasoning and adjust if necessary. Mix well.
    Serve with chopped cilantro, pumpkin seeds, and / or serrano chile pieces.
