    Mexican Chipotle Carnitas

    This simple pork meat dish is inspired in Mexican carnitas. This recipe is ideal for traditional tacos, open-faced tortilla tacos or your favorite style of fajita. 


    Ingredients

    pork shoulder, cut into 1 ½” (4-cm) cubes

    finely chopped Spanish onion

    finely chopped red bell pepper

    tablespoon
    finely chopped garlic

    tablespoons
    chipotle chile powder
    1/4
    teaspoon
    ground thyme
    1
    tablespoon
    dried oregano
    1/4
    teaspoon
    ground cumin
    3/4
    tablespoon
    kosher salt
    1/2
    teaspoon
    freshly ground black pepper
    1
    cup
    crushed tomatoes
    1 1/2
    cups
    chicken stock
    2
    small bay leaves
    Directions
    Heat the canola oil in the pressure cooker over high for the stovetop pressure cooker or use the browning setting for the electric pressure cooker. Add the pork and brown on all sides, turning with tongs, about 3 to 4 minutes.
    Add the onion, pepper and garlic and sauté for 2 to 3 minutes. Cancel cooking for the electric cooker; the residual heat will sauté the vegetables. Add all of the dried spices and herbs, except the bay leaves, and stir. Pour in the crushed tomatoes and chicken stock and stir to blend well all of the ingredients. Add the bay leaves and close the lid.
    Stovetop: Set to high pressure (15 PSI) and cook over high heat for 25 minutes total.
    Electric: Use the meat/poultry setting, or set to high pressure (10–12 PSI) and 25–30 minutes.
    When done, remove from the heat or turn off the cooker and release the pressure, using auto-release. Serve immediately.
