    Mangú with Garlic Shrimp

    This Mangú with Garlic Shrimp is jazzed up with tons of garlic, fresh cherry tomatoes, white wine, and fresh cilantro. It's a creative take on a usually-morning dish.


    Ingredients

    shrimp, deveined with tails on

    extra virgin olive oil

    garlics cloves, sliced

    cherry tomatoes, halved

    white wine
    1/2
    cup
    low-sodium chicken broth

    cup
    fresh cilantro, chopped

    salt and pepper to taste
    Directions
    In a large frying pan over high heat, sear the shrimp in olive oil for 30 seconds on each side. Remove from the pan and set aside.
    Lower the heat to medium and add the garlic and tomatoes until softened.
    Add the white wine and chicken broth and reduce by half.
    Slide the shrimp back in and season with salt and pepper.
    Simmer for five minutes, top with cilantro, and pour over mangú.
