    Mangú with Crispy Mushrooms

    Crispy mushrooms sautéed in safflower oil and melted butter, seasoned with thyme and parsley, top slightly sweet mangú.


    Ingredients

    safflower oil
    2
    pounds
    cremini mushrooms, cleaned and sliced
    4
    tablespoons
    unsalted butter
    1
    teaspoon
    fresh thyme, chopped
    1/2
    cup
    vegetable broth
    *
    salt and pepper to taste
    1
    tablespoon
    fresh parsley, to garnish
    Directions
    In a large non-stick frying pan heat oil over high heat, sear the mushrooms golden brown.
    Reduce the heat and add the butter, thyme, vegetable broth, salt and pepper. Cook another 5 minutes or until the liquid has reduced slightly.
    Serve over basic mangú and top with fresh parsley.
