    Mangú with Chicken Stew

    This Mangú with Chicken Stew is hearty and delicious with a classic mangu base topped with a tomato, garlic, and pepper chicken stew. It's hearty weeknight family meal. 


    Ingredients

    chicken, cut into 8 pieces

    granulated garlic

    paprika

    dried oregano

    extra virgin olive oil

    red onion, sliced
    6
    garlic cloves, sliced

    tomatoes, chopped
    1
    red pepper, sliced
    1
    green pepper, sliced

    low-sodium chicken broth

    cup
    fresh cilantro, chopped

    salt and pepper to taste
    Directions
    Season the chicken with granulated garlic, paprika, oregano, salt and pepper.
    In a large pot, heat olive oil over high heat and sear the chicken on both sides until just browned. Set aside.
    In the same pot on medium-high heat, sauté the onions and garlic.
    Add the tomatoes and peppers and cook until they soften slightly.
    Return the chicken to the pan and cover with chicken broth. Adjust the seasoning, if necessary.
    Turn the flame down to a simmer and cook for 30 minutes.
    Remove the chicken, shred into pieces, and place back in the pot.
    Sprinkle with cilantro and spoon over mangú.
