For Lime Macerated Strawberries, combine all ingredients and stir to ensure berries are completely covered. Set aside.
For Coconut Whip, open can and scoop out top layer of thick coconut cream into a bowl.
Add sugar and zest, stirring until sugar has dissolved. Return cream to refrigerator for 15 minutes. Remove coconut whip from refrigerator and stir again until smooth.
To serve, divide strawberries among 4 serving dishes and top with a dollop of cold coconut whip. Garnish with additional lime zest and a mint leaf.
