    Lime Cilantro Corn Salsa

    Sometimes all it takes is a few simple ingredients stirred together with a bit of lime juice and salt. Roasted corn, spicy black beans, tomato, and onion mixed with a bit of cilantro makes a perfect salsa for chips, on top of a burger, or simply on its own.

    medium green pepper, diced with ribs and seeds removed

    small yellow tomato, diced

    small red tomato, diced

    cooked black beans

    limes, zest removed and juice reserved

    Salt and pepper, to taste
    Directions
    Preheat oven to 400 degrees.
    In an oven safe dish add cleaned ears of corn, onion, and green pepper. Roast vegetables for 30-40 minutes, until corn is seared and cooked through, and the onions and green peppers appear wilted and burned on the edges.
    Once cooked through, carefully remove the corn kernels from the cob.
    In a bowl add all ingredients. Stir to combine. Adjust salt and pepper to taste. For best results and flavor, allow salsa to come to room temperature before serving.
