    Lentil-Stuffed Avocados

    Lentil-Stuffed Avocados are going to be your new favorite #meatlessmeal, featuring creamy avocado and hearty lentils seasoned with garlic, tomato, onion, red bell pepper, and celery.

     


    Ingredients

    Olive Oil

    yellow onion, diced

    red bell pepper, diced

    garlic cloves, minced

    celery stalk, peeled and chopped

    cup
    lentils
    3
    cups
    water or stock

    salt to taste

    pepper to taste

    tablet
    garlic powder

    6-ounce can tomato paste
    2
    avocados, pitted and sliced
    1/4
    cup
    cilantro, chopped for garnish
    Directions
    Preheat oven to 350 degrees.
    In a pot over medium heat add in 2 tablespoons of olive oil, onions, peppers, garlic, and celery. Sauté until tender, about 2 minutes. Add in lentils, water, salt, pepper, garlic powder, and tomato paste. Mix until all of the ingredients are well combined. Let the lentils simmer for 15-20 minutes until they are plump and tender.
    Cut the avocados in half. Add a few tablespoons of lentil into each avocado half and place on a greased baking sheet.
    Bake at 350 degrees for 10 minutes until the avocado is soft and tender. Garnish with cilantro leaves.
