Kale, Brussel Sprouts, Apple and Pomegranate Salad combines supergreens and superfruits in a deliciously crisp and naturally sweet salad perfect as an appetizer or a hearty entree.


Ingredients
For the Salad

brussels sprouts

medium apple, julienned

pomegranate seeds
For the Dressing

lemon juice

apple cider vinegar

garlic, minced

teaspoon
Dijon mustard

teaspoons
agave nectar

extra virgin olive oil

Directions
Wash the kale and separate the leaves from the stems. Cut or tear the leaves into bite size pieces.
Using a mandolin or sharp knife, thinly slice Brussels sprouts. Combine with kale.
In a bowl or a jar mix all dressing ingredients, add salt and pepper to taste.
Lightly dress salad and massage leaves with dressing until tender.
Add apple and pomegranate seeds. Toss and serve.
