    Kale and Jalapeño Falafel

    This crisp and golden Kale and Jalapeño falafel recipe is great for falafel pita lunches, protein packed falafel salad toppings, or on it's own as a delicious vegetarian meal.


    Ingredients
    For the Falafel

    cooked garbanzo beans

    Olive Oil

    chopped yellow onion

    garlic, chopped

    packed parsley, chopped

    teaspoon
    cumin

    teaspoon
    jalapeño pepper flakes

    cup
    packed kale
    1
    tablespoon
    ground coriander

    tablespoons
    fresh lemon juice
    1/4
    cup
    all-purpose flour
    1
    teaspoon
    salt
    1
    teaspoon
    fresh cracked black pepper
    For the Garlic Jalapeno Dressing
    1/2
    cup
    crème fraîche
    1
    tablespoon
    minced jalapeño
    1
    tablespoon
    chopped parsley
    1
    teaspoon
    fresh lemon juice
    1/4
    teaspoon
    salt
    Directions
    Combine all ingredients for falafel in a food processor. Pulse until a grainy paste forms.
    Pour an inch of oil in frying pan on medium heat.
    Make 2 inch wide and 1/2 inch thick patties out of falafel dough.
    Fry falafel in batches, 2-3 minutes per side, until crisp and golden on both sides.
    Meanwhile, in a small bowl combine crème fraîche with jalapeño, parsley, lemon juice and salt. Serve falafel hot alongside Garlic Jalapeño dressing.
