Combine all ingredients for falafel in a food processor. Pulse until a grainy paste forms.
Pour an inch of oil in frying pan on medium heat.
Make 2 inch wide and 1/2 inch thick patties out of falafel dough.
Fry falafel in batches, 2-3 minutes per side, until crisp and golden on both sides.
Meanwhile, in a small bowl combine crème fraîche with jalapeño, parsley, lemon juice and salt. Serve falafel hot alongside Garlic Jalapeño dressing.
