    Jalapeño Stuffing Hash Cakes

    Sweet potato, lots of jack cheese, jalapeño and left over stuffing come together in these gooey on the inside, crisp on the outside Jalapeño Stuffing Hash Cakes that are simply irresistible.


    Ingredients

    large sweet potato, peeled and shredded

    green onions, chopped
    1
    jalapeno, minced
    1
    cup
    shredded pepper jack cheese
    1
    cup
    cooked stuffing
    1/3
    cup
    2
    tablespoons
    Chopped Cilantro
    2
    eggs, whisked
    1
    teaspoon
    salt
    1
    teaspoon
    ground white pepper

    Directions
    Preheat frying pan with oil on medium heat.
    Meanwhile, in a large bowl combine sweet potato, green onion, jalapeño, cheese, stuffing, flour, cilantro, eggs, salt, and white pepper.
    Mix until a homogenous dough forms.
    Create 2 tablespoon balls out of dough. Slightly flatten balls to make cakes and slip into fry pan, 3-4 at a time, ensuring they have about 1/2 inch space between each cooking cake.
    Once golden on bottom, flip, and cook an additional 2 minutes until crisp and golden on all sides.
    Drain on paper towel lined plate and repeat until all cakes are fried to perfection.
    Serve cakes with sour cream and garnish with bright green onion.
