    Jalapeño Stir Fried Zoodles

    Brown rice noodles, carrot, zucchini, and jalapeño come together in this fresh and spicy Jalapeño Stir Fried Zoodles dish.


    Ingredients

    10-ounce box brown rice spaghetti
    1
    tablespoon
    coconut oil
    1/3
    cup
    leek, sliced thinly
    1
    clove garlic, minced
    1/3
    cup
    baby carrot, sliced
    1/2
    large jalapeño, thinly sliced
    1
    large zucchini, spiralized
    *
    salt and pepper to taste

    lemon wedges
    Directions
    Cook pasta according to manufacturer’s directions and set aside.
    In a large pot on medium heat melt coconut oil. Add leek, garlic, and baby carrots. Sauté until carrots have softened. Add jalapeño and sauté another 30 seconds.
    Add cooked spaghetti and continue stirring and tossing until pasta begins to toast a bit.
    Add spiralized zucchini and continue stirring and tossing until zucchini is warmed through.
    Season with salt and pepper to taste. Serve with a fresh squeeze of lemon on top.
